BEC DBS 2000 lock on to signal after installation problems

I spent 3 days on my roof trying Telstar 5. I have the BEC DBS 2000 system with 30in dish and ASC321 Ku LNBF. I tried all the alignment things including fine tuning. The 12152 MHz Transponder seems stable with the orangy quality at 69, but other TPs don't always lock on. What's frustrating is that sometimes the other TPs lock on with quality at 60-67, but most times it says no signal? There are always these long pauses before the signal locks on and why is it that when you change the channel you cannot get back to the channel?
1) Is anyone familiar with the BEC DBS 2000?
2) Is there some setting thing with LNB or other setting that I might be doing wrong (i.e. why it locks on only sometimes?)
3) Would a different Receiver help?
4) Would a larger dish help?
Any help would be greatly appreciated.

Kat, Thanks for your support. I tried further refinement but not much improvement. I believe I have a pretty clear view. Basically when I keep flipping channels with the remote, after a few minutes I am able to lock on to the 11929MHz TP for the Euro channels, which is mainly what I wanted. As long as I don't turn the rec. off or change to a different TP, the signal stays locked on. The orangy quality is at about 58 and drops to 50 with break up in heavy rain. As mentioned the 12152MHz TP is always good (quality 70). I guess the only thing I can try again is to move the Dish to a diff. posn and see if I can get the pole extra plumb, which is your good advice. Oh yeah I forgot, I'm one hour north of NYC.

Also make sure your LNBF is tilted correctly about 25* counter-clockwise and away from the dish.
