did you use a compass ? Did you correct for magnetic variation? Did you adjust your receiver settings right? there many little things you need to pay attention to to get it right.

Dish network uses a different type lnbf. Signal is also much stronger on echo and it is much more forgiving.

IS your pole level, plumb? There are plenty of instructions around, but set your skew correctly, then set the elevation on your dish as close as you can. Point your dish to 97W. Try making smal (very small movement left right to see if you get any quality - signal strength is misleading and you can get stregth if you point dish to the ground). Every tiem you move the dish, wait 5-10 second for a reciever to try to get a lock.

If you get some kind of quality, then try adjusting elevation slightly to get the strongest quality/strength possible.

If you don't get any quality, try adjusting elevation up down a little bit and repeat adjusting the dish left right.

More often than not it will be a misaligned dish rather than a faulty wiring or equipment.

Let us know how it goes.

trying to just hit echo 6.8/7 on this fortec 80p 30inch dish to see if it works....no luck...no quality on any of these satellites. thought that it would be easier to hit echo 6.8/7 with a bigger dish. ok mods........need some help here....like i said i've even change the universal lnbs. Plumb with a magnet level on pole 4 side and level top. Az at 126.5 El at 38.8
Shew facing dish -29.1 at 7:00 clockwise. receiver lnb set at universal 1 = 9750/10600 Lo. Tp at tp3 11898 V 20.000 to hit T5.
My bearing are:
Latitude 37' 44.646'N Longitude 122' 29.178'W

Where am I going wrong?

you can't hit echo 110/119 with a universal LNB. You need circular. Focus on getting IA-5 signal.

yea just do very careful adjustments on skew, azimuth, or elevation and you will get better quality.
