superdish 105 aiming with bird dog

Hey Guys..
I did my first superdish install other day, a few things I found odd but did some searching and one of my problems was I had my birddog set to linier not log... but I aimed dish using 105 lnb like book says most I got was 65 percent after a while tweaking I checked 110 and 119 those were both at 100% on meter but never got more that 65% on 105...
I did check switch all was good receiver shows I have 75% on 105.
It was installed it Detroit area....and the dish was a composite not metal pan. Post is also perfectly level.
My main questions are what the difference between metal and composite dishes are. And is it possible that the 105 signal is weaker and I will never get more than that in the area.

I was wondering if anyone has had any luck using the Birdog to locate Superdish 121W. I'm located in NJ and using a 33" dish with a fss LNB (not universal). I can pick up Satmex as well as other birds such as DTV and Dish network using a directtv dish and the Birdog locks in with quality scale. Birdog recommends changing from linear to log setting but either way I get a 80% signal when in the precise direction and elevation of the bird but it never "finds" superdish 121W. On the other birds, I get "found" with less signal strength.

Totally frustrated!
