Aiming a dish with the dvb card is tough but not impossible.If you don't have a signal meter, get one, it doesn't have to be an expensive one either, those $15 ones work fine. Size of dish depends on your location, with an 18" dish you wont get much fta other than the music channels on the dbs birds. Torroidal dish is fine for getting the dbs satellites, they have a strong signal but it won't work well for the linear polarized satellites, they are much weaker. An offset dish with a motor is ideal if you want to access everything that is up there, put a linear lnb at prime focus and strap a dbs lnb to the side of it. What you get for size of dish with or without motor has a lot to do with mounting location. I'm forever re-setting the motor, trying a new switch, climbing up to a chimney mount would be a major pain, but if you just decide on an 18" for a couple of satellites without motor, it would be fine on the roof.
You can control the motor with the nexus card, the diseqc signals are sent via the coax cable, no extra cables required. You can check out Lyngsat to see what satellites are viewable in your location.
