After some reading, I have an impression, that it is possible to get a signal from multiple satellites, if they are not far apart from each other: e.g. 119°, 121°, 123°.
So, quantity of dishes depends, how large is the angle between the satellites, you want to monitor.
I am also newbie here, and may be wrong

You'll need as many LNBFs as satellites you wish to receive. It is possible to put more than one LNBF on a given dish to receive more than one satellite simultaneously... but, usually, the satellites in question would be within 4 to 10 degrees of one another.

In short:

The number you seek is somewhere between 1 (motorized sat dish) and the number of satellites within clear view at your desired installation location.
