Good Strength and Quality - no channels!?
On Telstar 11 I've been able to get yellow strength and quality. However, I cannot get any channels...
I am a newbie...so maybe that's the problem. Can anyone help?
In particular, I'm looking for TV Polonia - it is not encrypted on T11 like it is on T5.

Did you try these parameters?
frequency = 12,187
polarity = HOR
symbol rate = 03254
forward error correction (FEC) = 3/4
That will bring in TV Polonia on Telstar 11.
In my area (Toronto, Canada) a minimum of a 1 meter dish is needed to get a decent signal from T11; I think the footprint is stronger for North Texas so you probably can get away with a smaller dish.

Can't get anything yet - but I haven't changed the FEC. Any idea how I can change the FEC?

If you cannot find a FEC adjustment in the Dish Setup menu then it is done automatically by the receiver. I haven't worked with a Benjamin for awhile so I forget where the adjustments are exactly. I'll dig up a manual and get back to you.

Oh, in the Dish Setup, not the Transponder Setup?
I'll have to check that tomorrow.
My old lady has made me disconnect the BEC so that she can watch network television tonight

Ok...the BEC 6600CI has automatic FEC - I found this in the specs of the manual at the very back, late last night.
You ask about tilt...I'm trying to figure out if I need to physically adjust any part of the dish/LNB to receive additional satellites.
I thought I could just change that information with my remote control and the motor, from my living room...

Since you are using a motorized system, you don't need to change the LNBF Tilt. It should be 0

So, in order to get another satellite, all I need to do is:
1) Get the Satellite frequency, the Symbol Rate and the Polarity.
2) Enter that information into my receiver.
3) Begin moving (via the motor, with the remote control) the dish east and west until I find the best signal?
Is that it? Am I missing any necessary steps?
These questions are still very basic, but you are helping very much!

First you have to align the motor so the dish accurately tracks the arc as it moves from east to west (assuming you haven't already done so).

EyeInTheSky installed the dish, so I'm assuming the alignment is just right.
Of course, they also demanded that a 75cm dish they had a better gain that the 90cm dish that they also sold...

Yup - the smaller the better I always say....
Well; so hopefully your installation was done properly. So yeah, now all you do is set up the active transponders on each satellite you want to pull in and program the receiver to memorize the motor position; from that point on it will move the motor by itself whenever you switch channels. Each receiver has a unique way of setting this procedure up. Some receivers don't do it at all or else only manually, so check the manual for your receiver.

Thanks for all of your help.
In playing with the setup last night, trying to figure out why T5 is the only satellite I'm receiving (and not even all of the transponders from T5), I accidentally moved the motor on T5 and lost it!
Fear not, within 20 minutes or so, I somehow found it again.
BTW, I know your location is very different from mine, but what satellites other than T5 are the easiest for you to receive?

Well; I'm a relative newbie at this motor stuff - only installed mine a few weeks ago and have not had time to explore all what is out there, but so far here are the satellites I've found:
Telstar 5 (97 deg)
AMC 4 (101 deg)
AMC 3 (87 deg)
Galaxy 3C (95 deg)
Galaxy 10R (123 deg)
I'm sure if I play around long enough I can pull in more birds.
