Center of Mississippi is about 90W

If this is your first motor install?, then I would probably put a circular LNB on it and use 91W. Once you have it with high quality, switch it out with a linear LNB and tweak the dish.

The reason for this suggestion, is that the circular sats are easier to get (lock) in setting up than the linear. The linear LNB has to sit a minute sometimes to finally 'pop' in, and it makes it tough to setup the first time. Unless of course you have a meter like the SAT3000 ;>)

Your zip code shows your Lat & Long to be 30-23.9 and 89-17

I would still use one of the 91W sats (Nimiq 1,3 or Galaxy 11) rather than AMC3 because it has mostly Feeds and are not always active.

There may be other suggestions here to get you started, just my thoughts.

I wasn't sure if you were looking for what sat was true south, or how to find true south to align your mount, but starting with the sat,

Looks like your Lat/Lon is about 30 20 / 89 15

You're true south sat is really IA8 http://www.lyngsat.com/ia8.html

I wouldn't bother putting in a circular lnbf to find Nimiq, like the last post said, although it is true, that it might be easier to find the Nimiq sat at 91 because it is so strong. Even if you wanted to do that, you can usually lock pretty easily on 12224 even with a linear lnbf, so it isn't necessary to put in a circular lnbf.
However the IA8 at 89, is really what you want anyway, not 91.

There is one strong signal at 11780, SR=29000 , which is pretty easy to lock. It is currently showing two Globecast test patterns and a blank screen. There are a few scrambled channels on that mux too.
Also, several of the news channels are often active. Right now, I'm seeing 12195 SR=3979, which is a Hearst-Argyle news channel.

The 11780/29000 is probably your best bet for tuning.

If you are looking for how to locate what "direction" true south is, go to
http://aa.usno.navy.mil/data/docs/AltAz.html and plug in your lat/lon, and tell it you want output every minute, and it will give you a table of sun azim times. Find the time that the sun is at an azimuth of 180. However don't forget that the times given are NOT daylight time, so you have to account for that.
If you want to use a compass, you can get magnetic deviations at
http://www.ngdc.noaa.gov/seg/geomag/jsp/Declination.jsp
