Let's start with what language do they speak in Brazil? I have no idea by channel name where it comes from. I currently have 123 channels in Spanish on the FTA receiver. Some I know where they come from some I do not. I know I have channels from all around Brazil. Soon I will have added another 40 or so Spanish language channels.

If I were you I would go to www.lyngsat.com and go through the sats available to you looking for the correct language. Would not if C band, Ku, circular, linear. If it is like the Spanish language channels some are the basic same channel just regional. Univision is a perfect example.

Portuguese is the language mainly spoken in Brasil.
I know only RTP Internacional on AMC4 is Ku band channel speaking that language

Being in CA you may not be able to reach the sats with Portugese. Eastern sats carry a few channels. Would say off the top of my head less than 25 but maybe a bit more than that.

Most of the world as I have found run on C Band. A run through lyngsat on the Atlantic sats will show P in the language indicator. I am setting up a dedicated dish for circular C Band off 40.5 which has some Portugese. Might have been 50 that had more.Like I say though C Band is most likely where you will find the channels.

Rede TV Sul

I have noticed it on my receiver, but it has only a Symbol rate of 3800. I am not an engineer, but it is always difficult for me to get a clear picture or really high quality with channels that broadcast at a low symbol rate. The channels that broadcast at 27500 are always perfect though. Maybee someone can explain the engineering to me.

In simple terms:

symbol rate has to do with how much bandwidth is being used by a channel/mux. Lower the symbol rate, less bandwidth and lesser the quality might be (if you are trying to fit 2-3 channels into low bandwidth/sr picture quality might not be all that great). You also have FEC which plays into the equation as to how errors should be dealt with.

The formula actually looks like this (this only applies to dvb qpsk):

symbol rate = (bandwidth / (2.0 * FEC)) * (204.0 / 188.0)

Can I get Brazilian channels with a 4-footer (120cm)?

I am a new to all this and I still haven't purchased any equipment. I am debating between a 90-cm dish and a 120-cm dish.

I too would like to get Brazilian programming in Portuguese. As I look at footprint maps I am slightly encouraged that 120cm might be enough to get some of them. Is this correct?

Roughly, could someone tell me by what percentage will the number of free channels that are available to me go up should I upgrade from a 90-cm dish to a 120-cm dish?
