When i turn my unit on, the screen keeps rolling and the color is black and white.
what do i do?

You have accidentally set the unit to PAL mode. Go into the manual and see how to set the output to NTSC.

thats the way it came
i can't see the screen good enough to re-set it
would someone please list the steps or the exact remote buttons to hit to change from pal to ntsc, this thing is rolling so fast i can't see to re-set it

Also, if you have a black and white TV (who does anymore) you will be able to see the screen which will allow you to reset the TV output to NTSC.

5" B/W TV sell at Wal Mart for maybe $10
