Fortec Classic and HDMI

I have a Fortec Classic receiver and will be buying a 20" LCD TV with a built in Dolby Digital decoder. My problem is with the ports on the TV.

There are only RCA jacks for audio and video and a HDMI port. How can I connect directly to the TV to make use of the Dolby decoder? Is there an adapter I can use to go from the optical port on the receiver to the HDMI port on the TV?

Even if there is such an adapter, the only way you can get video from the Fortec is via the RCA composite cable, and I'm guessing that there will be no way to select audio from the hdmi input on your TV if you've selected the composite video input. Unless one of those RCA jacks is an SPDIF digital audio, then you are probably out of luck. There ARE optical to coaxial adapters for spdif type audio ports.
