I would not recommend to install 2 dishes on 1 pole. But if you have no space, get a ku dish with U-bolt mount bracket.
Installing Ku dish is a bit harder than DN since Ku signal is much weaker than DN.
If you want to combine Cable, DN and T5 audio/video sources into 1 cable which runs to other rooms, use UHF cable
modulators. You can asign any channels from 14-69 for your a/v sources.

I have not much trouble to install Dish Network for one receiver. But I would like to install Dish Network 500 dish and Telstar 5 dish (Vietnamese VTV4) on one single pole.
