Greetings, Chief!
If you can afford un poco dinero more, definitely go for the M-1 system. You'll get canales múltiples en español. For example, there are numerous different Univision channels as well as Telefutura on G10R, plus Telemundo on AMC5 and many others.
It's an exciting world out there (or maybe I should say out of this world)!

Is it not harder to install and align the dish with a motor?

It is slightly harder and more challenging, but fun. If you want to adopt this hobby, you will enjoy installing a motorized system.

With the M1 system and located in IN one can sweep from 30 in the east to 123 in the west yielding roughly 53 channels in Spanish. If you can do a big dish I would definitely recommend this option as there are many more on C Band. I presently do not have an accurate count but believe we are nearing 250-300 channels in Spanish

Chief:
The installation guides on sadoun.com are invaluable, and when or if you have problems, post 'em here and get expert advice.
Above all, should you run into difficulties with your installation, don't get frustrated.
Once you've got things set, you'll be able to scan the various satellites and build and edit a roster of the channels you want to watch.

Once you get your Ku system set up and operating as desired. We can explore the possibility of adding a C Band dish. I am just finishing an install of a dedicated 8.5' dish pointed at 40.5 out over the Atlantic. It added 99 more channels most of which are in Spanish. M5 and M6 have a bunch of channels on C Band. I am thinking 30 or so on M6 and not real sure on M5 maybe 20.
There are 3 Azteca channels on IA6 at the present. Univision and Telefuturo on G10R Ku. Telemundo on K5 Ku. A few on M5 Ku. but really there are Spanish language channels on just about every sat out there. My gf watches her novelas out of Mexico off of M5 C Band 2 months before they are shown the US on Univision.

if you are going c band cheif I would recommend a 8.5 ft dish or larger if you are shooting for some of the channels Steve mention at 40.5 you will need a feedhorn that will do circular c band.the bsc-621 that sadoun sells will do this.

Ok start by locating a dish. My recommendation would be to search your location for an unused on in someones yard. You can most of the time get them for free. Another possibility is to check with local sat shops. Many times they have them laying around that can be had rather inexpensively.
The ideal find would be one with both C and Ku lnb's, a 24" actuator and at least 8.5' in diameter. You also want the pole if possible. Once you have this jewel laying in your yard locate a good location and plant the pole. 80lbs concrete for every foot of diameter. Pole needs to be plumb like the little dish. Well technically not plumb but will make you life much easier.

Boy, that can be a task. Once those things are mounted in concrete, it takes a backhoe to get one out, and if you cut it off at the surface, it will probably be too short. I tried getting a concrete footer out of the ground once, and almost pulled the frame off my car, even though I was using a lever type thing to pull up instead of horizontal. Never did get it out. I think I could do it now, with a small backhoe I have, but it would take digging around it first.
But yes, if you can get the pole, it will save a lot of searching, because some places those things are hard to find, plus if you do find them, they come in 22' lengths, and since most people only need about 11' or 12', you'd have to get it cut. On my first dish, when I lived near Baltimore, there was a nice pipe store that sold the stuff at a reasonable cost, but up here you can't find the stuff. I had to get the contractor who built my house to find some, and he had to go about 90 miles away to find it.
