Pretty much no to everything you stated. Sorry

The motor should be set to your latitude on the latitude scale of the motor. One side is probably marked elevation and the other latitude. These are not the same. Next is the dish elevation which is whatever the motor says - declination angle. Something like 30 - x. Most (I am not in France) are around 24 degrees or so. This is location specific. Now the entire assembly is aligned on true south and the hunt for signal begins.
Is the dish a Fortec dish? The 90cm Fortec dishes have been known to be off as much as 5 degrees on their scales. This should be of help.
