Yeah they do - it's just a little hard to find until you get used to it.

Take the first KU band transponder for example, 11,749 MHz;

go 6 columns to the right and at the top of the heading it says "SR - FEC", right under that is the number "7232" -- this is the symbol rate. So in your receiver you would enter "07232" because receivers expect a 5 digit number.
