It won't matter much if only a few degrees. You simply will have to compensate for the unlevel mast by reducing/increasing the elevation setting on the dish itself; example - if the mast is out of plumb by 2 degrees and pointing down due south -- then INCREASE the elevation setting on the dish by 2 degrees to compensate.
In fact, sometimes an unlevel mast doesn't matter at all; this would be true in cases of the dish pan being perpendicular to the wall. In this case the mast not being plumb is irrelevant because it is still "plumb" in reference to the dish elevation -- the only resulting effect will be the dish is a bit tilted (skew); for round dishes this is not an issue (at least for circular polarity LNBs).
