I'd really appreciate it if someone could walk me through setting up the receiver or if there is an existing guide, send me the link.

Be advised that none of the Fortec receivers are approved and/or supported by Dishnetwork.

You can use that Fortec receiver for FTA using a 76cm satellite Ku dish to receive G18, or G25 and for even for more fun buy your self a 6 footer for C band reception.
