Dish aiming

Hi,
I have a Vistar 2000 receiver. I always get a signal value of "93" and signal quality "low" when I try to aim the Dish. Is my receiver & LNBF working fine? Why do I always get the same value for signal. I never thought it was so difficult to point a dish to satellite.
I know my azimuth and elevation but how do I know what elevation is my dish is looking at? I mean it is so big and how do I measure angle of my dish.
I am in detroit MI so my elevation comes to 40 and azimuth 200. I have a elliptical dish and a offset LNBF from Pansat. Any suggestions? Is there any magnetic variation to my azimuth? How do I accurately know that my dish infact pointing at certain azimuth?
