Yes, you can set up h-h mount without aiming the dish at truesouth but it's a bit tricky. Here is what you can do:
1. Set the h-h mount elevation (equal to your location lat).
2. Set the dish elevation (whatever degs you get from the online caculator).
3. Use Diseqc 1.3 (USALS) move the dish to the sat you want tune (make sure you key in your Lat and Long correctly).
4. Try to get lock on the signal. If adjustment is needed, only adjust the dish elevation.
I have used this approach to set up one of my motorized dishes without aiming at true south. It tracks the arc OK.
