What Steve said above is all true, but in addition, I think there is one other possibility for what caused the symptoms.
Just a guess here, but can I assume that a new blind scan was not done with the new settings? Ie that you were just tuning to previously scanned channels and expecting them to lock? What I'm thinking is that this may not be an issue with respect to the current settings, but with respect to the settings when the original channels were scanned in.
What I'm guessing is that on those satellites that don't work now with the 10750 setting, that the wrong lnb type/LO freq may have been used back when they were scanned in with the universal lnbf. What that would cause, would be that if you scanned them in with a blind scan, you'd find some channels, but they would be stored in the receiver with the wrong frequency. Then, when you NOW enter the proper LN freq/ lnb type, the channel data stored in the receiver will not be correct. A quick way to find out is to tune in one of those channels that you were able to receive before, and hit the info button twice, and look at the Freq/SR values at the top of the display. If these values do not agree with what is listed in Lyngsat for those channels, but is perhaps off by 150 MHz, then this is certainly what happened.
If by chance this is the cause, then, the best thing you could do would be to delete all the channels on the offending satellites, put the sat specs back on the 10750 value with 22khz on, and do a blind scan, and it should scan in those channels again with the proper freqs.
So anyway, what channels (Sat, name, freq, SR) were you able to get before, that you can't get now???
