The skew is used for getting signal for the second LNB. You already have that set for your location. Once you have a lock on one sat the other should be there also. Moving up 5 flights should not really mess with elevation at all but might require a very small movement. I would not touch it though until I had signal from both sats first. Elevation is usually set to match your latitude.

How high off the ground you are has no bearing on latitude. Make sure your pole is mounted plumb. Here is exactly what I do. Before I moved I would line up directly behind the mast and look down the lnb's. What do you see for a landmark? A special tree or sign or something out there on the horizon. When you move point your dish at that landmark. You should be awful close.
